Really, does anything more need to be said? Seems like everything just tastes better wrapped in bacon…dates, jalapenos, asparagus, scallops, filet Mignon…I’ve tried them all, why not sweet potatoes? This lovely little bit of heaven did not disappoint! Great as an appetizer, side dish or even a light meal with a salad!
Bacon Wrapped Sweet Potatoes
1 Large sweet potato, peeled
4-6 slices sugar-free bacon
olive oil
chili powder
toothpicks
Preheat oven to 400 degrees F. Line a rimmed baking pan with foil or parchment paper. Cut the sweet potato into 1″ chunks. Slice the bacon in half crosswise and then lengthwise to yield 16-24 strips, use enough bacon to have one strip per sweet potato chunk. Wrap each sweet potato chunk with a strip of bacon and secure with a tooth pick, place on baking pan.
Drizzle with olive oil and sprinkle with chili powder.
Bake for 20 minutes, remove from the oven and flip over.
Place back in the oven for an additional 20-25 minutes, until the bacon is crispy and sweet potatoes are browned.
Remove to paper towel lined plate until ready for serving. These are best served warm with sour cream (if you eat dairy), homemade ranch or guacamole for dipping.

I was never a huge fan of bacon, but after trying it in a few different things I’m starting to change my mind….these look great!
These are seriously mouth-watering! What a great idea. I’ve always loved the classic appetizer of bacon-wrapped baked water chestnuts and this is a cool variation.

hahaha. totally. everything tastes better with bacon. I used to work with a chef that used to say “when in doubt add bacon”, while referring to flavoring a dish. SOunds yummy. Thanks for sharing it with us at Whole Food Wednesdays.

These are so good! I started making these a while back when I ran out of regular potatoes {which I would wrap in bacon} and I found them to be way better with the sweet. Since sweet potatoes are pretty healthy, I think it totally counteracts anything negative from the bacon, right? 🙂
Since sweet potatoes are so hard to cut when raw, did you heat them up or boil them first?
No, I just peeled them and cut them up with a really big sharp knife.
DEFINITELY use a rimmed baking sheet next time! 🙂
Also…I have cut these into bigger chunks and lightly steamed them before wrapping them in bacon and roasting…really cuts down on the roasting time when the sweet potatoes are partially cooked!
